Everyone loves a good pancake, including Jane Barthelemy, the author of many paleo-diet recipe books. These delicious three-ingredient pancakes are perfect for a quick, healthy breakfast, even on the go! They’re already naturally sweet so you don’t need the messy syrup with these tasty little treats.

 

1 banana

2 or 3 eggs

2 tablespoons coconut flour

 

Add all your ingredients to a blender. Heat up and oil a frying pan, preferably with coconut oil, but any oil will work. When the pan is hot, pour in the batter to your desired size. When the pancake begins to firm up and look a little dry on top, flip it and cook the other side.

These pancakes are super easy, super good, and super healthy; the banana is the sweetener, the eggs are the protein, and the coconut flour, which is also pretty sweet, helps to hold it all together, creating a texture similar to a conventional pancake.
